# Food for gay men: Yoghurt Cake

This is a quick and easy cake to make that can be flavoured with whatever you've got to hand.

I tend to add blueberries to it, because I like blueberries, but knock yourself out trying different flavour combinations.

### Ingredients

- 3 eggs
- 1/2 cup yoghurt (needs to be good quality full-fat yoghurt).
- 1/2 cup olive oil
- 1/2 cup caster sugar
- 1/2 cup self-raising flour (or use plain flour with 2 tsp baking powder)
- 1/2 teaspoon vanilla essence

### Method

1. Use an electric mixer to mix everything together in a bowl.
2. Transfer into a lined round cake-tin.
3. Bake at 180 degrees until cooked (takes about 25 minutes)
4. Leave the cake to sit in the tin for 10 minutes.
5. Turn out onto a rack to cool.

### Flavour

- Depending on what flavouring you're using, you can either add it in during the mixing stage (step 1) or once you've transferred the mixture into the cake-tin (step 2).
- If I'm making a blueberry version, I scatter a punnet of blueberries over the top of the cake mixture before putting the tin into the oven.
