Roasted Cauliflower

A tasty vegetarian option.

Cauliflower done right. It's hard to beat a good Cauliflower Cheese, but roasting cauliflower is another easy way to get some flavour into this vegetable.

This is a pretty simple paste that you can coat cauliflower florets in and then just bang it in the oven.

Ingredients

  • Garlic cloves
  • Olive Oil
  • Yoghurt
  • Harissa
  • Thyme or Oregano
  • Brown Sugar
  • Salt
  • Lime Juice

Method

Combine the ingredients for the paste in a blender. Adjust the amounts depending on your taste. You'll probably need about 6 tbs of yoghurt and 3 tbs of oil to get the volume of paste that you'll need for an entire cauliflower head.

Cut the cauliflower into bite-size florets.

Put the cauliflower into a bowl and then cover with the paste - stirring to ensure full coverage

Place the cauliflower into a baking dish or onto a baking tray - leaving them well-spaced.

Roast in a hot oven for about 30 minutes until they are cooked all the way through and have some caramelisation.

I usually serve this with a smashed white-bean - you need something a bit wet as the cauliflower ends up a relatively dry texture.
