My mother sent me this recipe. She says that my Uncle Bernie used to make these all the time, although I can't really remember that.
I think that they're proper name is Herb Scones, but I always think of them as Uncle Bernie's Cheesy Balls.
It's a pretty basic recipe that you can adapt to whatever you've got to work with.
I usually add some chorizo for extra flavour, and serve them topped with smoked salmon and crème fraîche.
I have tried substituting the grated cheese with ricotta - that doesn't work, the texture is all wrong.
- one cup self raising flour
- one cup grated cheese
- one cup milk
- fresh herbs
- salt and pepper
- Combine the ingredients.
- Spoon into greased patty tins
- Bake in a very hot oven for 10-12 minutes
