Food for gay men: Coronation Chicken
A protein-rich feast that's fit for a queen.

First created in 1953 to celebrate the coronation of Queen Elizabeth II, Coronation Chicken is an iconic combination of flavours that reflects the post-colonial era uncertainty of an empire that had lost its grip on the world.
Because it's a relatively blunt flavour profile with a forgiving texture, you can adapt the basic concept to suit whatever you're doing.
Here's my version.
Ingredients
Note: Adjust the quantities depending on how many people you're serving. You're going to need to use your judgement and taste to adjust the flavouring.
- Chicken thighs
- Red onion
- Yoghurt
- Curry Powder
- Mango Chutney
- Courgette
- Sultanas
- Flaked almonds
- Fresh lime
Method
- Cook the chicken and set to the side. Once it's cool, you can shred it into a mixing bowl.
- Finely chop the onion and fry it off. Once it's cool, you can add it into the mixing bowl with the chicken.
- Slice the courgettes and oven-roast them. When they're cool, finely chop and add to the mixing bowl with the chickn.
- Into the mixing bowl with the chicken, add the yoghurt, curry powder, chutney, and sultanas.
- Top with flaked almonds to serve. Squeeze some fresh lime over it to give it some zing.
To serve
While you can use the chicken mixture in any way that you fancy, a good option is to use lettuce cups.
I bulk up the chicken mixture with some pearl barley. Prepare some lettuce cups using the leaves of Baby Gem lettuces. You can then spoon some of the chicken mixture into a lettuce cup and then eat with your fingers.
