Food for gay men: Cinnamon teacake

In Home Economics class at school, this was the first cake that we learnt how to bake.

It's super-easy, quick, and delicious.

I made it recently for my Book Club and it got a good reception.

It's not super healthy - it's a lot of flour, butter, and sugar - but if you stick to one slice it's a treat that you probably deserve.

Ingredients

Cake batter

  • 65g butter
  • 1/2 cup caster sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup self-raising flour
  • 1/3 cup milk

Cinnamon topping

  • 10g butter
  • 1/2 tsp ground cinnamon
  • 2 tsp caster sugar

Method

  • Heat the oven to 160°C.
  • Line a 20cm round cake tin, or use whatever tin you've got available.
  • Using an electric mixer, combine the butter, sugar, egg and vanilla, then gradually add in the flour and the milk to keep a smooth consistency. If you don't have an electric mixer, you can do this just with a bowl and a wooden spoon, it's just easier with a mixer.
  • Transfer the mixture into the cake tin and put it into the oven.
  • The cake will take about 25 minutes to cook but keep an eye on it as the cooking time will vary depending on the shape of your cake tin and the way that your oven works. Use a skewer to confirm that it's cooked before taking out.
  • Let the cake sit in the tin for five minutes, and then turn it out onto a wire rack to cool.
  • While the cake is cooling, make the cinnamon topping by combining the sugar and cinnamon in a bowl. Brush the top of the cake with melted butter, and then sprinkle on the cinnamon-sugar mix.
  • The cake is best eaten when super-fresh, it doesn't keep particularly well.
